DoubleTree Hotel Appoints New Chef, Launches New Menu

PITTSBURGH –DoubleTree by Hilton Hotel & Suites Pittsburgh Downtown is announcing that Fred Davis is joining the team as Executive Chef for the hotel and the Bigelow Grille.  Davis brings with him a new and exciting culinary flair that combines the tastes and flavors that people recognize with newly crafted distinctive dishes.

Trained at the Pennsylvania Culinary Institute, Chef Davis comes to the DoubleTree with over 21 years of experience in several very impressive kitchens. Davis spent 14 years as Banquet Chef for the Ritz-Carlton in Bachelor Gulch, CO, and most recently served as Executive Sous Chef for Fairmont hotel in Pittsburgh.

 “I believe people eat with their eyes first and it is important to create a stunning presentation,” said Chef Davis. “My personal journey with food has been inspired by the mantra, look at it, taste it, love it.   If you present something that looks appealing and that has incredible flavor, you create an experience that makes people want to come back for more. “

In his new position, Davis will be in charge of designing new menu concepts and will oversee the hotel’s Food and Beverage department including banquets and room service.

New menu items include: BBQ CARROTS, Baby heirloom carrots cooked in apple cider then pan roasted and drizzled with extra virgin olive oil, tossed in house made barbeque rub.  Accompanied by grilled romaine and lemon oil. LAMB KOFTA, Ground lamb, seasoned with toasted cumin, coriander, fresh mint, dill and cilantro, is combined to give the mix a bright and fragrant aroma. The salad portion is a fresh mix of arugula, shaved red radish, roma tomatoes, roasted acorn squash and ciabatta. Finished with labneh as the perfect accent to add a creamy coolness to balance the bite and spice from the kofta.
